cups6-7 cups wheat flour, wholewheat

Steps
Sequence Step
1Scald milk and cool.
2Dissolve yeast in warm water in large mixing bowl; add milk and honey.
3Beat in 3 cups flour and eggs.
4Beat 100 strokes or 2-3 min. on mid. mixer speed.
5Cover bowl and let stand 20-30 minutes.
6Mix in salt and remaining flour, 1/2 cup at a time, until dough can be turned out on a lightly floured surface to knead.
7If using dough hook, add shortening and complete by kneading on dough hook 8 minutes. If kneading by hand, knead 10-15 min., gradually kneading in shortening.
8Let dough rise in greased and covered bowl until doubled.
9Punch dough and divide in half.
10Let dough stand while greasing 2, 8" x 4" dough bread pans.
11Shape, place in pans, and let rise until doubled.
12Bake in 375 degree oven 8-10 minutes; then at 350 for 10-20 minutes.
