Ingredients
Amt. Measure Ingredient
1
package (12 oz)Ground meatless fat free crumbles,Boca
1
1/3
cupsSoup, cream of mushroom, canned, condensed, reduce
8
ounceslight cream cheese
1
1/3
cupsfat free milk
2
cupsRice, white, long-grain, regular, raw, enriched
1
1/2
cups (8 fl oz)water
Steps
Sequence Step
1Cook rice, as directed, with only 1 1/2 cups of water for 2 cups of rice. Do not over cook. Rice will not be compeletely done.
2While rice is cooking, heat up the meat crumbles in a large pan. You may need to use a small amount of oil or nonstick cooking spray to prevent the crumble from sticking.
3Combine the cream of mushroom soup and milk in a separate bowl. Try to smooth out as many lumps as possible. Once the rice has absorbed most of the water and is still slightly uncooked, add the rice and the soup mix to the meat crumbles over medium heat.
4Pinch off small pieces of the cream cheese and stir in to the mixture. Continue until all of the cheese has been added. Reduce heat and let simmer until the rice is completely cooked.
5Serve while hot. I don''t like a lot of salt, so you may need to season to your taste. This meal is great for leftovers!!
