11) Pre heat oven to 150*-170*, depends on lowest oven setting. 2) Grind 3 C white wheat and 3 C red wheat with 3 unflavored vitamin C tablets (500mg ea). This will become 8 cups of wheat flour. 3) In Bosch mixer add water, milk powder, oats, oil, honey and 4 C of freshly ground flour. 4) Mix on low for 4 minutes. 5) Add yeast (preferably SAF instant yeast), gluten flour, and salt. 6) Gradually add the remaining 4 C ground flour. 7) Knead for 12 minutes on medium until the dough pulls away from the bowl and is soft and elastic. The bowl will be clean and the dough velvety. 8) Spray 4 loaf pans with a non stick spray. 9) Pour 1 teaspoon of oil on a clean counter top, turn bread onto counter coating in oil. 10) Divide dough into 4 equal portions; pat out each into a rectangle and roll up pinching the ends and sealing the edge. 11) Place each into a loaf pan and into the preheated oven. TURN OFF THE OVEN!! 12) Let rise, untouched, for 30 minutes. 13) Turn on the oven to 350*, DO NOT DISTURB THE PANS! Bake 35 minutes until loaves are golden brown and when tapped sounds hollow.
