Steps
Sequence Step
1Bring six cups of water to a boil in a large sauce pan
2Stir in the rice, reduce the heat and simmer the rice, uncovered, until it is tender- about 35 minutes
3Drain the rice and put it in a serving bowl.
4Stir in the vinegar and salt, allow the mixture to cool to room temperature- about 30 minutes
5When the rice is cool, stir in the oil, pepper, shallot, cardamom and a pinch each of mace and cayenne pepper.
6Add the mango pieces and stir them in gently so that they retain their shape
7Cover the salad; to allow the flavors to meld, let salad stand, unrefrigerated, for about 30 minutes before serving it
