**This is not my recipe.** This is Happy Herbivore's recipe, via her fabulous meal plan (go to www.happyherbivore.com to learn more). I just wanted to plug it in so I could see the full range of nutrition. Note: The recipe requires 1 pound of carrots. I estimated 4 large carrots based on the amount of carrots in the 5-pound bag I had on hand.

Developed from a basic Betty Crocker recipe, I replaced the oil and egg with pumpkin, and switched out the cow's milk for unsweetened almond milk.
