1Dice onion and celery, put in large pot with butter, cook until tender.
2Peel and cut up potatoes, add to first ingredients along with chicken broth.
3Once potatoes are tender add milk and cornstarch, cook 15 minutes and Velveeta cook until melted. Do not boil. Add salt and pepper to taste.
