Pour diced tomatoes in colander and rinse with cold water. Let drain and dry.

While tomatoes dry, heat 2 tsp olive oil in non-stick frying pan. Cook the sausage until brown, breaking into small bites.

When the sausage is done, make a layer of sausage in the bottom of an 8 x 11 casserole dish and top with tomatoes, spreading them out over the sausage. Season with oregano, salt and pepper to taste.

Cut pepperoni slices in half. Sprinkle the mozzarella cheese over the top of the casserole and lay the pepperoni pieces on top of the cheese, spacing evenly and covering the whole top.

Bake 25 minutes or until cheese is melted ad starting to brown.
