Preheat oven 375 degrees. Spray muffin tray with non stick spray.

mix eggs very well. Cut ham into small pieces and add into egg.

add cheese and mix well.

pour mixture into muffin tray filling 2/3 to 3/4 full. (20 muffins)

bake for 20-25 mins until set. Remove and let cool in tray for 2-3 mins.

use butter knife to loosen sides. Remove and let cool on cooling rack for 30 mins. Store in airtight container. May also freeze.

microwave 2 muffins for 30 seconds... will be very hot!
