Preheat oven to 350. Mix all flours and salt in a medium bowl. Cut cold butter into flour mix until it resembles small crumbs. Add egg and cold water and mix. Place in fridge for about 30-40 min. When chilled, roll half of dough between to sheets of parchment paper. Remove top sheet and place pie pan over dough and flip over. Remove paper and smooth dough into pan.
Bake for 15 min. Let cool.
Bring 1 1/2 cup water to boil and add jello; stir until desolved. Beat cream cheese with stevia; slowly add jello until fully blended. Pour into pie shell and chill for at least 2 hours.
