Whisk eggs and milk with salt and pepper to taste

Spray omelet pan with cooking spray.

Saute onions until just soft.

Add mushrooms to pan and suate to desired doneness.

Pour egg/milk mixture into pan. Allow to cook until edges look dry.

While egg mixture is cooking, sprinkle shredded cheese over center.

Flip, if you can - or scramble it up.
