Preheat oven to 375 degrees. Bake pie shell for 10 minutes until partially set.

Cook spinach according to package directions. Drain well.

Combine spinach, monterey jack cheese, cream cheese, sour cream, salt and thyme.

Arrange your ham in the bottom of the pie shell and spoon the spinach mixture on top.

Combine eggs and milk and pour over the ham and spinach mixture.

Bake in pre-heated oven for 45-50 minutes. Let stand 10 minutes before serving.
