Preheat oven to 350 degrees. Line mini muffin pan with paper liners. Set aside.

In a large mixing bowl.add almond flour, salt and baking soda. Mix well.

Add clarified butter, monk fruit maple syrup, eggs, vanilla extract and lemon zest. Mix well.

Gently fold in blueberries.

Spoon batter into 24 mini muffin cups. Bake for 20 minutes. Let cool before enjoying.
