Steps
Sequence Step
1Heat butter and oil in skillet
2flour the fish on both sides and season with salt and pepper
3fry fish in skillet for at least 5 minutes per side, depending on thickness of fish; remove from the pan and keep warm
4In same skillet, add the onion, tomatoes and peppers; saute for 3 minutes.
5Add the fish sauce and continue cooking for 3 minutes.
6Adjust seasonings to taste.
7Combine cornstarch with a little cold water to thicken; add to skillet. Once liquid comes to a boil, pour it immediately over the fish and serve.
