Steps

1Add chicken broth to a slow cooker.
2Add chicken, thawed, to the slow cooker.
3Add salsa to the slow cooker. Optional - puree first in blender or with immersion blender if you prefer a less chunky soup.
4Cook on high for 3 hours. (Can alternatively cook on low for 5-6 hours).
5Add the 4 ounces of low-fat shredded cheddar and 4 ounces of cubed light cream cheese and stir.
6Cook one more hour on low. Stir and serve with chips and guac or crusty bread.
