Preheat oven to 375. Spray loaf pan with cooking spray.

Combine all dry ingredients in one bowl and all liquid ingredients in another.

Gradually add dry ingredients to liquid mixture and mix with electric mixer for one minute. Stir in walnuts.

Pour into loaf pan and bake for 1 hour and 20 mins. Allow to cool well before slicing.
