Pour 2 tbs of oil in a hot large pot.

Add oxtails, and tomato and brown them.

When oxtails are complete browned add enough water to cover the meat. Simmer until meat falls off bone.

Add carrots right before you turn off the pot.You can substitute carrots for butter beans. You can also add browning sauce by Grace for color.
