Sequence Step
1Cut up chicken into strips or chunks and cook in skillet. If using non-stick skillet, only a bit of cooking oil spray is necessary.
2Spray baking dish with cooking oil spray. Layer tortillas, black beans, corn, yogurt, salsa, chicken, and cheese 3x.
3Bake about 20 minutes until heated, cheese is melting and tortillas get done (mushy).
4NOTES: Cans of corn, beans and salsa may or may not be all used. Be generous with the tortillas. Variations: Add a layer of avocado. Make it a red salsa instead of green. Add fresh tomatoes to the layers.
