Recipe Description This is a recipe I had found while doing Weight Watcher's years ago. I'm not even sure where I found it, but it was so good, we continue to use it today.

tablespoonMargarine, light

cups, chopped or diced6 Chicken breasts boneless skinless

smallOnion, chopped
2
clovesgarlic minced

can (16 fl oz)tomatoes canned, diced

cupchicken broth, fat free, low sodium
1
cupfat free half and half
1
tablespoonparsley flakes
4
slices cookedbacon, cooked and drained of fat

medium (2-1/4" to 3-1/4" dia.)potato, diced
Steps
Sequence Step
1Cook bacon, remove
2Steam chicken breasts until cooked through.
3Melt 1/3 of the margarine. Ad mushrooms and cook until slightly done.
4Add remaining margarine and melt. Add onions and garlic to mushrooms and continue to cook over medium heat until onions are softened.
5Add tomatoes, chicken broth
6Simmer 25 minutes. Then add salt
