Brown chicken with olive oil but don''t worry about ti being cooked. Once browned set aside.
Add minced shallots to the pan and cook a few minutes until soft. Add thyme and cook for a few seconds until fragrant. Add 2 cups water and 1/2 bullion cube and deglaze pan. Add lemon juice. Add chicken breasts back into pan and cook for 10 minutes while covered. Remove chicken breasts and cover with tinfoil to rest. Increase heat on pan to high and reduce slightly. Add cream once reduced.
Serve sauce over chicken.
