Prepare ingredients by peeling and chopping potato, chop up scallions, chop up bacon.

Place a large pot on the stove and set heat to medium

Cook bacon until the fat is rendered

Add in potatos, butter, garlic, salt, pepper, parsley and scallions. Toss the ingredients around to evenly coat.

Add in the brocolli and cauliflower and mix.

Add in the water and turn pot to medium-low heat. Cook for 3hrs 30 minutes.

Reduce heat to low and mix in sour cream and cheese.

Serve and remove from heat.
