Sift and whisk together dry ingredients. Separately whisk together wet ingredients and slowly incorporate into dry, making sure to break up all lumps.

Cover loosely and allow to rise at room temperature for 2 hours or until doubled in size.

Turn batter into 4 buttered mini loaf pans and allow to rise an additional 40 minutes.

Preheat oven to 350* and bake 40-45 min or until caramel brown and firm to the touch.

Allow to cool partially in the pan to maintain shape, then unmold and lay loaf on side, alternating sides until completely cooled. Allow to cool completely before serving.
