Saute onions and garlic until translucent.

Boil Water for Rice Noodles

Add curry powder, ginger, other spices.

Add cubed extra firm tofu, cook 5 mins on Medium Heat

Add Raw Spinach, stir in and cook until volume decreases substantially.

Add Juice of 1/2 Lemon.

Add 1/4 cup water

Add 3 tablespoons natural unsalted Peanut Butter, stir in until thoroughly mixed.

Simmer until rice noodles are cooked
