Rinse shrimp under cool water and dry.

Place flour on a large plate.

Beat the egg with 2 tsp. water and pour onto another plate.

On a third plate, pour the coconut.

Heat the oil in a deep heavy pot until a thermometer reads 365 degrees.

Dredge the shrimp with the flour.

Holding the shrimp by the tail, dip the flesh into the beaten egg and then coconut.

Line a baking sheet with paper towels and put a mesh cooling rack over it.

When the oil is hot, fry one third of the shrimp at a time. they should take about two minutes.

Remove shrimp with a slotted spoon and transfer to the cooling rack.
