1Saute garlic, crushed red pepper and olive oil over medium-low heat with a dash of kosher salt until fragrant.
2Meanwhile, chop onions and green and red peppers. Add to the pot and toss until the veggies are covered in the olive oil. Raise heat to medium and cook uncovered for 10 minutes, stirring frequently, until onions are translucent.
3Drain the liquid from the two cans of tomato. Add to the pot with the veggies. Add the can of tomato with Italian herbs (including the liquid) and the dry basil, oregano and parsely. Return heat to medium-low and let simmer for 45 minutes, stirring occasionally.
4Add a small can of tomato paste and frozen meat substitute. (Boca crumbles is preferred over Light Life ground crumbles, but that ingredient is not available in this database). Cook for an additional 5 minutes, until meat substitute is tender and sauce is thick.
5Combine with 16 ounces of whole wheat pasta (prepared according to box''''s directions) - penne or spiral noodles catch sauce well to ensure sauce in every bite.

1Boil five quarts of water, add a teaspoon of salt
2Add the noodles and cook until ''al dente'' (italian for ''to the tooth'' or if you bite the noodle you will feel the bite)
3Drain well and mix in the butter to keep the pasta from sticking.
