mix 80* water, salt and yeast and wait 5-10 minutes, til yeast proofed.

add flour to water and mix till all flour is incorporated. leave to rise, about 2-3 hours

divide into 3 and quickly shape into 3 loaves

preheat oven to 450*. bake in dutch oven with lid on for 15 minutes, then lid off for final 15 minutes
