Sequence Step
1Pour the water into a large suacepan. Peel the zest in large strips from one of the oranges and the lemon. Add to the water along with all of the juice from the oranges. Add the cinnamon stick and stir in the honey. Heat the poaching liquid over medium heat and bring to boil.
2Meanwhile, peel and core the pears. When the liquid reaches a boil, add the pears and reduce the heat to a simmer. Make sure that the pears are completely submerged. Simmer the pears for 10 to 15 minutes. Cover with a lid and remove from the heat. Allow to cool completely in the liquid.
3Remove the pears from the liquid and slice. Serve with toasted nuts and dried fruit or over a salad with vinaigrette.
