Recipe Description Using a variety of vegetables and a couple veggie boullion cubes (along with about a dozen meatless meatballs), I made a Veggie Stew that is warming and delicious.

Meatless Meatball and Veggie Stew
Ingredients

large (7-1/4" to 8-1/2" long)Carrots, sliced into thin coins

stalks medium (7-1/2" - 8" long)celery, sliced

cups (8 fl oz)boiling water

large (3" to 4-1/4" dia.)potatoes, peeled, chopped

cups, choppedwalnut halves, roughly chopped

tablespoonsflour unbleached mixed into 1/2 cup water

Sequence Step
1once chopped, mix all ingredients into the already browned (caramalized) onion and mushroom mixture.Cook with 1/4 of the water, lid on, until potatoes and carrots are softened, then add the boullion and boiled water.
