preheat oven to 250 degrees

rinse chicken and pat dry with paper towel. sprinkle with salt and pepper

in dutch oven, heat oil and add chicken to brown on both sides

remove chicken and add veggies and cook a littel bit

add chicken on top of veggies; cover with foil, and place lid on top

put in oven and roast for 2 1/2-3 hours. Until chicken is cooked
