| 1 | Lay tortilla flat spread out on plate. | 2 | In a small bowl, mix smashed avocado, sliced onions, and hummus together with a spoon. | 3 | Then spoon the avocado mixture onto the flour tortilla and lay a bed of spinach onto the mixture, and top it off with the white beans and the sliced tofu. | 4 | Fold over the opposite ends over onto itself and roll the tortilla towards you and serve cold, with a recommended side of vegetable chips. |
