Steps

1preheat oven to 350 degrees and spray 6 inch round cake pan with nonstick cooking spray. rinse and drain blueberries, if using frozen allow enough time for the berries to thaw and drain.
2mix egg and mashed banana''s together.
3mix in apple juice until well combined.
4add dry ingredients then with hand mixer beat for 2 minutes on high.
5fold in blueberries.
6pour batter into sprayed 6 inch round baking pan. Bake at 350 degrees for 15-20 minutes or until the center of the cake springs back when touched lightly.
7remove from oven and let cake cool in the pan for 2 minutes. insert knife around the edges to loosen the cake from sides and invert onto cooling rack. let sit for 30 to 45 minutes.
