In skillet, heat olive oil and add onion, garlic and bay leaf. Stir until slightly browned, approx. 6 mins.

Push onion, garlic to side and add tomato paste. Cook for 2-3 mins. while slowly integrating onion/garlic to paste. Paste should be slightly darker than the beginning.

Add crushed tomatoes, parsley, oregano, basil, vinegar, salt, and pepper. Increase heat and bring to a boil, then reduce heat and simmer for 15 mins. Remove bay leaf.
