Saute mushrooms and tomatoes in olive oil

remove from pan when soft

whisk egg whites and egg and put into pan

lift eggs of omelet so that egg mixture runs under omelet until it is mostly cooked

put tomato misture on half of omelet

fold over and cook until there is no more runny eggs seeping out
