In a large bowl place the potaoes, garlic, Extra virgin olive oil, and fresh rosemary season to taste with cracked pepper and salt. Mix together and let stand for a few minutes.

Cut two pieces of heavy duty aluminum foil and place half of the potatoes into the center of foil,dull side up. Fold length-wise until laying on top of the mixture. Next, roll each end towards the center.

Do the same with the remaing sheet of foil and potatoes. Fold in the same manner.

When coals are white with ash place each packet upon the coals close lid and time for 10 minutes.

When 10 minutes have elapsed remove lid and with a pair of tongs turn packets over, and replace lid and again time for 10 minutes.

When 10 minutes have timed out,remove the lid and place the packets on a plate and let cool.

When a few minutes have elapsed, open packet and remove their contents onto seperate plates.
