Beat the butter in a mixing bowl with an electric mixer on medium to high speed until crfeamy.

Add 1 cup of sucanat, baking soda, and cream of tartar.

Beat until combined.

Beat in water and flax seed.

Beat in the egg and vanilla until combined.

Beat in as much flour as you can.

Stir remaining flour.

Cover and chill for 1 hour.

Combine 2 tablespoon of sugar with cinnamon. Shape dough into 1 1/4 inch balls.

Roll balls in sugar and cinnamon mixture to coat.

Place balls 2 inched apart on an ungreased cookie sheet.

Bake at 375 for 10 - 11 minutes.
