Once a year, I do the Daniel fast and created this recipe out of desperation for something vegetarian and delicious!

Open and drain black beans, corn and tomatoes into deep dish skillet, add salsa: do not drain. Cover and simmer on medium until boiling.

scoop 1/3 of mixture into 13 x 9 inch pan, cover w/ 1/3 "cheese", cover w/ 3-4 tortillas (I cut some in 1/2 as to not overlap the tortillas).

repeat step 2 until all mixture is used. Bake at 350 degrees for 20 minutes. Let cool for 10 minutes. Serve and enjoy.
