Beat egg whites until frothy.

Slowly add iced water, one tablespoon at a time.

Slowly add sugar, mixing continuously.

Add spices.

Fold in pecans.

Preheat oven to 250 degrees.

Coat a cookie sheet with cooking oil spray.

Using a large slotted spoon, drain excess coating from pecans.

Place pecans on cookie sheet in a single layer.

Bake at 250 degrees for 1 - 2 hours until pecans are dry.

This recipe makes lots and lots. Glaze can be frozen once and reused.
