1. Melt butter in large pot.

put chopped onion, celery and carrot in butter. Cover the pot and cook over low-medium heat for 5 minutes, stirring occasionally, till vegetables are soft.

add curry powder. Saute for 1 to 2 minutes.

add broth and cauliflower. Cook till cauliflower is very soft, 20-25 minutes.
