Put 2T yeast and 1/2T sugar into 1/4c warm water.

In a large bowl, crack 3 eggs and 1 egg yolk. Reserve extra white. Beat eggs. Beat in 1 c sugar, vanilla, cinnamon and salt.

Pour in yeast mixture, which has now doubled in size. Add 2c water and 3/4 c oil.

Stir in flours, until a dough forms.

Knead until elastic and smooth.

Oil bowl, return dough to bowl, and let rise 4-5 hours until doubled in size.

Separate into 4 loaves. Braid each one, brush with reserved whites. Bake at 350F for 40 minutes.
