beat two whole eggs, add egg whites and quarter cup milk beat together. Chop cheese into small pieces. Add cheese and vegetables to egg mixture, stir in stir breaking up any lumps of spinach. Add salt and pepper to taste, I also like to add a little garlic powder, I think it goes nicely with spinach.
