Sequence Step
1heat oil in a large sauce pan. Add rice and toss to coat. Saute for 2-3 minutes or until rice begins to brown. Add rum and deglaze, followed by water and coconut milk. Bring to a boil. Add mango and reduce heat to medium low. Cook 20 minutes or until fluid is absorbed. Fluff with a fork and serve.
