Brush bottom of glass dish with canola oil. Brush both sides of all tortillas with canola oil.

Mix cottage cheese, egg beaters, salt, cream of wheat, and cubed cream cheese together.

Scoop with 1/4 cup measure the cheese mixture into tortillas (on one half only) and roll into tube ending with noncheese side. The cheese will spread evenly as you roll tortilla. Place into glass dish with seam side down.

When all tortillas are full and in dish, place in oven and bake as follows.
