1Preheat oven to 425 degrees F.
2Brush bottom of glass dish with canola oil. Brush both sides of all tortillas with canola oil.
3Mix cottage cheese, egg beaters, salt, cream of wheat, and cubed cream cheese together.
4Scoop with 1/4 cup measure the cheese mixture into tortillas (on one half only) and roll into tube ending with noncheese side. The cheese will spread evenly as you roll tortilla. Place into glass dish with seam side down.
5When all tortillas are full and in dish, place in oven and bake as follows. 20 min at 425 20 min at 400 cover loosely with foil 20 min at 375 Remove and allow to cool.
