Mix oats, honey, nuts, brown sugar, cinnamon and salt in a bowl. In a saucepan warm the oil and honey, whisk in vanilla. Carefully pour the liquid over the oat mixture. Stir with a wooden spoon. Spread granola in a 15x10 pan. Bake 40 minutes at 300 degrees. Stirring every 10 minutes. Cool completely. Store in airtight container for 1 week or freeze for 3 months
