green chile enchilada sauce (1 15oz can)

Chop onions.

Pound chicken breasts flat.

Grate cheese - or slice into rough julienne strips.

Slice open whole green chiles so can be stuffed. Put in cheese and some chopped onions (onions to taste).

Spray rectangular glass baking pan with oil mist. Place spinach in bottom of pan.

Place stuffed chiles on flattened chicken breats and roll up. Place on spinach.

Mix remaining onions (to taste) and chopped cilantro in green chile enchilada sauce and spoon over chicken and spinach.

Cook at 375 degrees F for 20-30 minutes.
