In separate large bowl, lightly beat together egg yolks and buttermilk.

Stiffly beat egg whites

Combine dry ingredients with buttermilk/egg yolks. Fold in stiffly beaten egg whites.

Cook like any other pancake. Pancakes will not bubble when ready to flip, so watch closely. Great with fruit or syrup.
