1Toast slices of whole grain bread on light setting. Then brush with 1 Tbsp. olive oil and grill in medium skillet until golden brown on both sides.
2Cook eggs in remaining olive oil until they are over medium-well, meaning there is only a very small amount of running yolk left with most yolk being firm and light yellow.
3rinse and lightly dry the spring mix. When toast is grilled on each side transfer it to a plate and top with the mixed greens. Top with the over medium eggs and enjoy this open faced, Italian street food. Great any time of day but I prefer breakfast.
