Heat oven to 350 (325 for dark pans); butter and flour loaf pans; Combine dry ingredients; add oil, eggs, vanilla and mix on low until combined, add zucchini and mix on low 1 minute, then on medium 30 seconds to 1 minute; OPTIONAL: add 1 cup chopped nuts or 1 cup chocolate chips.
Pour into loaf pans; bake until wooden pick comes out clean - est 45 minutes. To make healthier, use 1.5 cups white flour 1.5 cups wheat flour.
