1Pre-heat oven to 325 degrees. Grease a 12-cup muffin pan with cooking spray.
2Mix eggs, milk, and pepper.
3Blanch spinach in hot water until leaves are soft (2-3 minutes)
4Divide ham slices into thirds and place into muffin cups. Turkey, bacon, or cooked sausage can be used instead of ham.
5Divide the spinach into the muffin cups.
6Ladle the eggs over the ham and spinach.
7Bake for 10-15 minutes or until the egg is firm, but not over cooked. The quiches will shrink some once they are cool.
