Preheat oven to 350 degrees. Place arthicokes in a food processor and pulse until chopped well. set aside. heat olive oil over medium heat. add onion and zucchini. Cook 3-5 minutes or until softened. lower heat. add garlic. add tomato sauce and artichoke, olives, oregano, parsley and salt. cook 15 minutes or until sauce is thickened.

while sauce is cooking prepare peppers. cut in half lengthwise. remove stems and seeds. plce peppers in boiling water for 2 minutes. drain in colander. place in a large baking dish w/cut side up. when sauce is finished mix the quinoa into sauce stirring well. spoon mixture evenly into pepper halves. bake uncovered for 20 minutes.
