Steps
Sequence Step
1Preheat oven to 350, spray mini muffin pans with baking spray.
2Mix dry ingredients in large bowl. Add Zuchinni and mix unitl Zuchinni is coated with flour mixture.
3In small bowl mix eggs, oil, applesauce and vanilla until well blended.
4Add egg mixture to the flour mixture and stir until well mixed.
5Add walnuts
6Fill mini muffin pan with @ 1 tablespoon of batter. Bake @ 30 minutes or until knife comes out clean. Immediatly turn out muffins onto cooling rack.
