heat oil, fry onion and ginger until nicely soft

mix curry powder with water to make a paste and mix well with the onions and ginger. Allow to blend, stirring.

add the chicken and coat it with the curry mix

add the tomatoes, bring to a low boil, reduce the heat and simmer for 30 minutes or until the chicken is done.

add salt if required (this recipe does not include salt)
